Ruby’s Marmalade Cake

Afternoon tea, real classy like

2 cups self-raising flour
1 cup caster sugar
3 eggs
1 cup full cream Greek yoghurt
Zest of an orange, finely grated
125 grams unsalted melted butter
1/2 cup Ruby’s Ruby Grapefruit Marmalade, plus extra for icing

Butter and paper line a 22cm spring form cake pan. Set oven at 170C/3200F. Combine the dry ingredients in a bowl and set aside. Beat the eggs with the yoghurt, zest and butter and pour into dry mix. Stir to combine. Pour into paper lined cake pan and bake for 40-45 minutes, or until cake is evenly golden, test with skewer.

1 1/2 cups icing sugar, sifted
juice of an orange
1 teaspoon Ruby’s Ruby Grapefruit marmalade
Dash of hot water if needed

Combine sugar, juice and marmalade in a bowl, mix vigorously adding hot water to loosen if needed. Pour over cooled cake. Serve with a pot of strong black tea.
