A classic lunch favourite we'd love to share with you:

Princess Pantry Steak Sandwich

  • Allow 2 pieces sliced sourdough per person
  • one 120g piece of flattened rump steak
  • dash of olive oil
  • roasted tomatoes
  • washed rocket leaves
  • your favourite mayonnaise
  • salt and pepper
  • Princess Pantry's Princepessa's Balsamic Onion Jam

1. Heat heavy fry pan. Add a dash of oil and sizzle steak, season each side with a little salt and pepper.

2. When cooked remove from pan and set aside. Meanwhile spread mayonnaise on bread. Arrange rocket leaves on one slice.

3. Place steak on top of leaves. Add tomatoes and finish with a generous spoon of Onion Jam

4. Top with remaining bread. Serve immediately.

We invented a very special afternoon tea using our jams; we garnished cakes, layered jam through shortbread and filled tarts, all in all we had a lovely time making everything delicious and pretty. On the menu were Orange Flower Cakes, Harriet's Little Tarts and Hungarian Shortbread Snow Flake Fingers.

Each February on the very pretty Mall in Leura NSW, we all grab our georgette flapper dresses and get ready to kick up our Charleston heels in remberence of those wonderful days of Gatsby glamour. This year we celebrated with a smashing picnic with contributions from some of the best restaurants and food producers in this neck of the woods. Princess Pantry's offering was an antipasti that featured local cured meats, hand made Musica di Carta bread, olives from Orange & our own pickled vegetables. The event was titled 'Long Lunch in Leura' and it was in the most languidly elegant way.

One of the joys of being a jam maker is trundling off to the country side and picking big basketfuls of fruit. We had a glorious day at Bilpin at Cedric's gorgeous orchard in preparation for massive preserved lemon production. Please see our earlier post on 5 ways with preserved lemons
