A sweet introduction ...
My Nana Alice’s kitchen was a magical place, especially on her jam-making days, when it was filled with baskets of fruit from her neighbours’ gardens, gleaming jars were lined up on her busy shelves and big bags of sugar rested against the table legs, waiting to be added to whatever pot was bubbling away on her stove.
My sister Lou Lou and I were treated to thick buttery slices of toasted tank loaf dripping with ruby coloured quince jelly, served with sugary cups of black tea in Nana’s Clarice Cliff teacups for breakfast. In the afternoon we’d lie on her big feathery bed and read the Princess and the Pea and other fairy tales, then fall asleep with the smell of Nana’s jam wafting through the house.
There is no doubt she was an inspiration. My early experiences in her kitchen surely influenced my desire to cook professionally, where the opportunities to hone my skills with the making of preserves were abundant.
Later on, a stint with Sean Moran taught me that only excellent fruit makes excellent jam. From that important note we now source as much produce as possible from the famed Central West Region of NSW, where the stone fruit, figs and tart green apples abound with glowing health.
Princess Pantry was founded in 2002 as an ode to Alice. We now supply fine food stores and cafés around the country. Our commercial kitchen is nestled in the beautiful Blue Mountains, just a hop, skip and jump from the bright lights of Sydney and the orchards of the Central West. This ideal location means we can source high-quality produce and transform it into product while everything is at its delicious best.
